Indian Egg Curry – Dorin Pegu

A very special dish that my mother cooks for our family almost every weekend . being an egg lover, this delicious home made dish is perfect for me and that is why i chose to share this recipe with you . No food is as tasty and mouth watering as home made food hence a flavoursome and original dish coming your way !

Ingredients:

2 boiled eggs
2 boiled potatoes
2 medium sized tomatoes
1 onion
1 ½ teaspoon jeera powder
1 teaspoon coriander powder
1 ½ teaspoon garam masala
2 bay leaves
1 teaspoon red chilli powder
1 teaspoon ginger garlic paste
1 ½ teaspoon turmeric powder
Salt as per taste

Method:

1)Poke the boiled eggs with fork or knife and add a little turmeric powder, chilli powder and salt then half fry in a pan. Then keep the eggs aside.

2) Heat oil in a pan. Then add 1 ½ teaspoon jeera seeds , chopped onions, bay leaves, ginger garlic paste. Sauté till colour change . Then add turmeric powder, red chilli powder , coriander powder , jeera powder and sauté . then add chopped tomatoes,  then add salt. Cook till tomatoes softens.
3) As tomatoes softens, add the potatoes each cut into 4 halves with the tomatoes and mix well. Cover and Cook for 2 to 3 mins. Add water as required and garam masala with eggs  and cook for a while. Then  sprinkle kasuri  maithi leaves on  top. Serve hot!
